Pan-seared oštiepok

A quick apartment-kitchen version of warm Slovak oštiepok cheese with cranberry preserve and a fresh salad.

Step by step

How to make it

  1. Cut the cheese into slices about 1.5 cm thick and pat the surfaces dry.
  2. Heat a non-stick pan over medium-high heat and brush it with a very small amount of oil.
  3. Sear the cheese for 1–2 minutes on each side, turning once, until deeply golden but still holding its shape.
  4. Season the salad lightly, place the hot cheese beside it and add cranberry preserve.
  5. Serve immediately; oštiepok firms as it cools.

Apartment-kitchen tip: Do not slice the cheese too thinly. A thicker piece browns before the centre softens enough to run.
